Heritage Baking: An Evening with Hewn Bakery’s Ellen King

Down on Dempster Street in Evanston, the artisanal bakery Hewn turns out hearty, flavorful bread the way it was made hundreds of years ago. The store has become a major presence in the Chicago food scene and recognized nationally for its farmer-miller-baker advocacy. On April 24, the library will welcome Hewn’s head baker, Ellen King, to speak about the ingredients and techniques she has revived to produce extraordinary loaves. There will be samples!  

Ms. King’s 2018 cookbook, Heritage Baking: Recipes for Rustic Breads and Pastries Baked with Artisanal Flour from Hewn Bakery, includes 45 bread and pastry recipes for bakers of all skill levels.
